The history of this treat dates back to 1985 when American bakers Rich and Greg Komen created a recipe that transformed a small bakery in Seattle into a globally recognized brand. The secrets to their success include using a special type of cinnamon called "Makara," grown in Indonesia, and the precise number of twists in the buns.

Yevhen Klopotenko noted that it is challenging to find this cinnamon in Ukraine, but regular cinnamon also yields a tasty result.

For making the cinnamon rolls, the chef recommends using brown sugar; if unavailable, regular white sugar will suffice.

The recipe includes simple ingredients: flour, milk, yeast, butter, sugar, and cinnamon.

For the dough:

  • 450-500 g flour
  • 200 ml milk
  • 1 tablespoon sugar
  • 25 g fresh compressed yeast
  • 100 g butter
  • ½ tsp salt

[For the filling:

  • 100 g butter (+ for greasing the pan)
  • 100-150 g brown sugar (or regular)
  • 1-2 tablespoons ground cinnamon

For the glaze:

  • 250 g cream cheese
  • 1-2 tablespoons lemon juice
  • 2 tablespoons powdered sugar

Preparation

In a large bowl with flour, crumble the fresh compressed yeast, then add sugar and salt on one side. Gently mix all ingredients to ensure they are evenly distributed.

Next, transfer the flour and yeast mixture into the bowl of a stand mixer. If you don’t have such a device, no worries—knead the dough by hand. Add softened butter and warm milk, and start kneading the dough until it forms a cohesive ball.

After that, if you used a stand mixer, knead the dough by hand on a surface or board. Shape it into a ball and place it in a large glass bowl previously greased with vegetable oil. Cover the bowl with plastic wrap and let it sit in a warm place for an hour. It's important to ensure there are no drafts in the room, as this will help the dough rise better.

Once the dough has risen, punch it down and roll it out into a rectangular sheet about 2-3 mm thick. Using a pastry brush, evenly spread softened butter over the surface of the dough. Then sprinkle ground cinnamon and brown sugar over the dough, creating a delicious filling.

Roll the sheet into a log and visually divide it into six pieces. You can use kitchen twine or a knife for this. Then grease a baking dish with butter and place the cinnamon rolls 1-2 cm apart from each other. Cover them with a clean towel and let them rise for 20-30 minutes while the oven preheats to 180 degrees. Bake the cinnamon rolls for 30 minutes.

Meanwhile, prepare the glaze: mix cream cheese, powdered sugar, and lemon juice until smooth. Once the cinnamon rolls are ready, generously coat them with the glaze so they soak it up well. Serve warm, enjoying their unparalleled sweet, aromatic atmosphere.
